This is what Danny has titled “The Salad That Started It All” 🥗 . Okay, so this may be a bit dramatic but this Grilled Chicken Taco Salad from @eatingwell was the “gateway salad” so to speak that really kick-started my husband’s love of flavorful, nutrient packed dinner salads a few years ago. . Our strategy has been to stick to favorites, but slowly ADD in more color and nutrition. Chicken, tortilla chips, and avocado? Who makes the dinner decisions in your house? You? Your Partner?🙋‍♀️🙋‍♂️ Last night, our dinner creation came from a combination of us both! . Once my husband became more interested in vegetables and his appreciation for a well-balanced, tasty meal really grew, the more he became involved in the cooking process. Okay, so maybe he hasn’t jumped into the kitchen to help chop every night, but he has contributed in at least one major way that helps me so much! 👨‍🍳 . Danny is very good at helping decide WHAT to have for dinner. While I have preferences and can definitely tell you when I’m not in the mood for a certain dish, I’m relatively easy going and usually game for whatever he fancies or thinks up for that night. . Last night Danny wanted a lighter dinner (read: lots of VEGGIES because they make us FEEL GREAT) and he suggested roasted brussel sprouts and butternut squash. Awesome- half the meal is figured out! I picked up some chicken breasts and chickpeas for us to decide between later- we went with za’atar sautéed chicken- and I already had some salad greens and cooked quinoa to round out the bowl. I decided the finishing flavor touch would be an adapted version of the Turmeric Tahini Mustard Sauce from @dishingouthealth. Teamwork made dinner come together easier, and I wouldn’t have it any other way! . If I eat enough of these brightly colored, zesty fruits I’m hoping that will make the sunshine stick around longer☀️I’m currently very into BLOOD ORANGES and have been adding them to everything from dinner salads to morning grain bowls! . When I brought one into work the other day my co-workers were quite intrigued by this variety and curious about their health benefits compared to more commonly seen orange varieties. This is what I shared with them: 👉The vitamin C content of navel and blood oranges run about the same per serving, with the navel edging out a tad ahead. Remember, vitamin C is just as important BEFORE the onset of cold symptoms as it is during a bout of sickness🤧 👉Navel and blood oranges are great sources of fiber and most of the carbohydrate content comes from natural sugars- don’t fear this type of sugar, it’s fruit, ya’ll!🥳 👉Blood oranges do contain higher amounts of anthocyanins, which is the compound (also found in blueberries and cranberries) that gives them their red color and helps fight off cell damage👊 👉They both have a sweet flavor, but the blood orange does provide a kick of tart and bitterness, so be prepared!😋 . “But I don’t like to eat the SAME THING every day.” . Does this describe your thoughts on meal planning or food prepping? . This is something I hear from patients all.the.time and I usually reply me, “Phew, me neither! I love when there’s variety in my food choices, cooking methods, and flavors.” Just because you’re getting ahead in the kitchen and creating a loose structure for meals and snacks for the upcoming week does NOT mean things need to be monotonous, boring, or uninspiring. . One way that I like to mix things up with my EASY food prep strategy (choosing a base of grain, protein, and 2 veggies) is by making a different TASTY SAUCE to serve each day. While the base meal remains the same, I get to experience a whole new flavor profile each day! to be honest, the sauce is what I’m looking forward to most 😋 . This week my lunchbox options look like this: 🥗BASE: quinoa, massaged kale, shredded carrots, steamed cauliflower rice, canned chickpeas 🌿SAUCE 1: Cilantro Cream- blend 1 bunch cilantro, 1 clove of garlic, pinch of sea salt, 1 tbsp lime juice, 3 tbsp avocado oil, 1 heaping spoonful of plain greek yogurt 🥥SAUCE 2: Yellow Curry- recipe adapted from @pinchofyum (yes, I’m still going strong on this) 🍅SAUCE 3: Herby Marinara- mix your favorite jarred original marinara with some dried basil and dried oregano . Plant based. Going veg(an)atarian. Not eating meat. What are your thoughts? 🤔Tell me in the comments... . The other day in my stories I asked if you tended to eat differently or relatively the same when your partner is out of the house. As I’ve talked about before, together Danny and I are flexible eaters, meaning we eat a wide variety of proteins (from chicken and lamb, to eggs, nuts, and now more chickpeas), do not restrict or limits carbs to once per day or only at a certain meal (🤦‍♀️), and we try our very best to prioritize vegetables and fruits. . However, when he travels for work and I’m left on my own I do tend to make most of my meals revolve around non-animal proteins. Plant sources of protein contain nutrients that benefit my heart, gut microbes, and energy levels and are something I value, but feel some weeks are lacking in them more than others. . Since he’s been gone I’ve enjoyed this Curried Lentil Grain bowl for lunch on the daily. If that wasn’t enough plants, my dinners have been pretty bean and plant heavy as well. And while I have LOVED the taste, ease, and change of pace, I have to admit I’ve felt a little “off”, less filled, and a little bored. Besides getting my sweetie back for V-Day I am really looking forward to my meat-preferring partner to return! . What I hope you all take away from this is, eating in the extremes and in an “all or nothing” approach is something that does not always make us FEEL our best. And when you’re living with someone else, we can easily take for granted the fact that the other person has preferences that actually may help to provide that BALANCE! While the most popularized nutrition guide from the @usdagov is shown on a plate, that doesn’t mean you can’t shake things up and build My Bowl! Sometimes, the easiest way to ensure good nutrition makes its way into a meal is by tucking it right alongside some of your own favorite foods. Danny and I love bowl meals so that all the flavors mix together and there’s less chance of just picking around something green and unfamiliar, although that’s less of a concern these days 😉 . Our crowd pleasing BOWL formula goes a little something like this: 🍠Starch: lately we are loving legume-based pastas like @eatbanza mac and cheese, and I just got the @barilla red lentil rotini to try too! Other whole grain starches that set a bowl up for success are quinoa, sweet potatoes, brown rice, or cous cous. 🍗Protein: for weeknights an easy, quick protein scores major points. We commonly keep @wholefoods chicken sausages in the fridge to slice and quickly saute, just like this bowl is rocking. Shredded chicken, crispy tofu, or edamame are also powerful add-ins. 🥦Veggies: as if my meal needed more orange, I added some roasted butternut squash zig zags and brussel sprouts to this meal, but you can add whatever your hearts desire! Spinach wilts in easily, frozen cauliflower is quick, sauteed peppers and onions are fun, and roasted eggplant would be absolutely amazing! .
