It's the end of August and the heat is back with a vengeance, which means I want ALL the cold sweet treats! A new vegan ice cream shop opened up in our neighborhood this summer and if I didn't have to pay my air conditioner energy bill, I think all my money would go there in an effort to keep me cool and satisfy my sweet tooth.
Alas, vegan ice cream can't be had every night, BUT you can make your own healthy cold desserts at home to be enjoyed whenever the mood, or heat, strikes!
I came up with these berry popsicles for two reasons: my husband has barely eaten a serving of nutrient-rich summer fruits and I wanted an excuse to break out my popsicle maker. For our wedding, we got a Zoku pop maker, which allows you to enjoy frozen treats in mere minutes! It's seriously a lifesaver and if you have freezer space, I highly recommend this product. For this recipe, I couldn't resist the plump blueberries and blackberries at the market, so I bought a pint of each.
This recipe also contains Siggi's Icelandic style skyr. While fruit just isn't a habit for my husband, yogurt is usually outright avoided because of it's texture and tang when served on its own. Dairy products like yogurt and skyr contain so many health benefits, such as feeding your gut with probiotics and providing you will a good source of protein and calcium, so I am always looking for ways to add it in, inconspicuously, to our meals and snacks to give his gut a boost.
So, the next time you find yourself with an overabundance of berries and some yogurt, break out your blender and popsicle molds to create these berry pops!
Berry Vanilla Popsicles- makes 6 pops
- 1 5.3 oz. (small) container Siggi's vanilla skyr
- 1/2 cup blueberries
- 1/2 cup blackberries
- 1 cup water
- Place all ingredients in a blender and puree on high until smooth.
- Pour the mixture into Zoku base or your own popsicle molds, insert popsicle sticks, and freeze until solid and remove from molds.
